		<description><![CDATA[Candied fruits and vegetables are prepared by gradually concentrating them in syrup.  This is done by repeatedly boiling the fruit or vegetable until it is heavily filled with syrup.   To prevent stickiness, the product is dried after being boiled in syrup.  On the other hand, glazed fruits and vegetables are prepared by coating the candied  fruits or vegetables with a concentrated solution of sugar and  confectioner’s glucose syrup.  They are also dried to produce a transparent product.  The finished product should not be soft, too tough and leathery. Procedures: Selecting fruits and vegetables.  Choose mature, firm and sound fruits and vegetables.  Those that are over ripe are too soft and will not stand the long process. Preparing the fruits and vegetables.  Wash and cut fruits or vegetables into desired shape and size.  Soak the fruits and vegetables in diluted lime solution to make the texture firm.  Treat those that easily discolor with a diluted solution of sulfurous acid.  After this process, wash the fruits and vegetables very well to remove the sulfur or lime.  Drain. Ingredients: 3 cups grated unripe papaya 2 sweet red bell peppers 2 green bell peppers 1 carrot 1 small cucumber 1 hot red pepper Solution of 4 parts vinegar and 1 part sugar Procedure: Soak the grated papaya overnight in strong salt solution. Peel and slice the cucumber and carrot into desired size and shape.  Soak overnight in a strong salt solution with a  pinch of alum.  Wash with water and drain well.  Cut the sweet and red, green  peppers into desired shapes.  Pack the first six ingredients in jars.  Boil the solution of vinegar and sugar.  Then pour into jars until product is covered.  (Before using the jars,  these should be sterilized first).  Cover jars , seal and label.]]></description>

		<description><![CDATA[Pineapple Preserve Peel the sound ripe fruits and remove eyes. Wash them very well. Cut large  the fruits into desired thickness and shape. Leave the small fruits whole. Drop the fruits into boiling syrup (2 parts water: 1 part sugar). Cook it rapidly until translucent and tender. Rapid cooking will result in a sparkling product while slow cooking, a dull and discolored product.   lf desired, pack it while hot in clean glass jars and seal tightly. Process it over boiling bath for 30 minutes. Cool, wipe-dry, label and store. Candied Pineapple Peel a firm ripe pineapple. Remove the eyes and  the core. Wash it  thoroughly. Cut it into wedges of about 2cm. thick or dice it into desired size and thickness.   Soak the cut fruits in hot boiled heavy syrup (1 part sugar: 1 part water) containing citric acid equivalent, to 0.3% (3g/liter of  syrup,and sodium benzoate,  0.1% (1 g/liter of syrup). The latter is added as a precautionary measure against mold growth.  Let the material stand overnight in a cool place.  Drain the fruits. Increase thesyrup the syrup concentration by 2% or more and boil. Cool the hot syrup slightly and re-soak the fruits. Repeat this operation daily [...]]]></description>
